Sauté the onions in sesame oil for 5 minutes, stir in half cup of water, turn down – lid on, and allow to cook for 1 hour so this is amazingly sweet & satisfying.
Add the herb salt, mix well & sauté for a few more minutes stirring regularly.
Drain the tofu and scramble it with your hands.
Mix in the sweet corn and tofu.
Mix the white miso, lemon juice, olive oil & water.
Sprinkle over & mix into the tofu, onion & corn mixture.
Serve with some freshly chopped parsley.
