As we move deeper into this season, I’ve been thinking a lot about gratitude, how it’s rarely found in the loud, grand moments, but instead in the quiet little pauses that hold us together. The comfort of something simple and nourishing waiting in the kitchen. This week, I want to share a recipe that carries this softness with it, my Parsnip Hummus. Ingredients

  • 6 parsnips peeled and cubed
  • 1/4 cup olive oil
  • 1/4 tsp ground coriander
  • 1 1/2 tsp ground cumin
  • 3/4 tsp sea salt
  • 2 garlic cloves minced
  • 6 tbsp tahini
  • 4 tbsp lemon juice
  • 6 tbsp water

Instructions

  • Toss the cubed parsnips with the coriander, cumin, sea salt, and half of the olive oil.
  • Roast in the oven until soft, or simmer gently on medium heat for about 15 minutes, until tender.
  • Transfer the cooked parsnips to a food processor. Add the garlic, tahini, water, remaining olive oil, and lemon juice.
  • Blend until smooth and creamy.
  • Serve with a drizzle of olive oil, a sprinkle of fresh parsley, or a pinch of chilli flakes.
