Pasta & Pepper Salad
Servings 2 people
Ingredients
- 2 Cups Wholegrain pasta Cooked
- 1 Red pepper Cut into match sticks
- 1 Yellow pepper Cut into match sticks
- 1/2 Cup Black olives
- 1 Tablespoon Sesame oil
- 1 Tablespoon Vegan pesto
- 1 Tablespoon White Miso
- 3 Tablespoons Water
Instructions
- Heat sesame oil in pan and add peppers.
- Saute for 5 minutes stirring frequently.
- Add generous pinch of salt & saute for further 10 minutes.
- Once peppers are soft, turn off the heat and allow to cool.
- Stir in cooked pasta and chopped olives.
- Make sauce by mixing pesto, white miso & water.
- Mix into the pasta and serve.
