Pasta & Pepper Salad

Ingredients

  • 2 Cups Wholegrain pasta Cooked
  • 1 Red pepper Cut into match sticks
  • 1 Yellow pepper Cut into match sticks
  • 1/2 Cup Black olives
  • 1 Tablespoon Sesame oil
  • 1 Tablespoon Vegan pesto
  • 1 Tablespoon White Miso
  • 3 Tablespoons Water

Instructions

  • Heat sesame oil in pan and add peppers.
  • Saute for 5 minutes stirring frequently.
  • Add generous pinch of salt & saute for further 10 minutes.
  • Once peppers are soft, turn off the heat and allow to cool.
  • Stir in cooked pasta and chopped olives.
  • Make sauce by mixing pesto, white miso & water.
  • Mix into the pasta and serve.
