Corn & Tofu Scramble

Ingredients

  • 3 Onions Chopped
  • 1 Block Tofu
  • 2 Cups Sweetcorn Cooked
  • 1 Tablespoon Sesame oil
  • 3 Tablespoons White Miso
  • 1 Juice of one lemon
  • 1 Tablespoon olive oil
  • 1/2 Teaspoon Herb salt
  • 3 Tablespoons Water
  • 1 Handful Parsley

Instructions

  • Sauté the onions in sesame oil for 5 minutes, stir in half cup of water, turn down – lid on, and allow to cook for 1 hour so this is amazingly sweet & satisfying.
  • Add the herb salt, mix well & sauté for a few more minutes stirring regularly.
  • Drain the tofu and scramble it with your hands.
  • Mix in the sweet corn and tofu.
  • Mix the white miso, lemon juice, olive oil & water.
  • Sprinkle over & mix into the tofu, onion & corn mixture.
  • Serve with some freshly chopped parsley.
