Corn & Tofu Scramble
Servings 4 people
Ingredients
- 3 Onions Chopped
- 1 Block Tofu
- 2 Cups Sweetcorn Cooked
- 1 Tablespoon Sesame oil
- 3 Tablespoons White Miso
- 1 Juice of one lemon
- 1 Tablespoon olive oil
- 1/2 Teaspoon Herb salt
- 3 Tablespoons Water
- 1 Handful Parsley
Instructions
- Sauté the onions in sesame oil for 5 minutes, stir in half cup of water, turn down – lid on, and allow to cook for 1 hour so this is amazingly sweet & satisfying.
- Add the herb salt, mix well & sauté for a few more minutes stirring regularly.
- Drain the tofu and scramble it with your hands.
- Mix in the sweet corn and tofu.
- Mix the white miso, lemon juice, olive oil & water.
- Sprinkle over & mix into the tofu, onion & corn mixture.
- Serve with some freshly chopped parsley.
