Winter cooking is about embracing the elements – the wind and snow, heavy rain and blizzards. These are reflected either in our inner world of thoughts and emotions, or the outside weather – or both. To sustain ourselves through these conditions, we prepare rich, warming and hearty dishes that give us the necessary heat to match the cold season. Join us for this season’s Atelier de Cuisine, “The Stillness Within.” Atelier de Cuisine is a series of one-day workshops that we offer during each season, providing a chance to fully immerse ourselves in the flavours and ingredients that each season brings to our kitchen.
Following the festivities around the Winter Solstice, many of us may experience the cold and quiet month of January as something of a contrast. This can be challenging, but as we enter the depth of winter there is an invitation to find and embrace ‘the stillness within’. Deep winter offers a calm and solitude that can be nourishing, as we recover our energy in preparation for the Spring ahead.
