BAKED OATS WITH APPLES

Baked oats with apples 

This is a recipe which is very easy to make. It can be stored and refrigerated for up to 4 days. Prepared the day before makes it a speedy alternative for breakfast  the morning after. Box it or wrap it up and transport to your workplace or give it to your kids to enjoy at school or take as a snack in between meals.

Ingredients

  • 3  cups 750 ml of oatflakes (gluten free if necessary)
  • 1  tablespoon of natural baking powder
  • 1/2 teaspoon of sea salt
  • 1 or 2 tablespoons cinnamon cardamom can be used too or a mix of both
  • 1/2 cup chopped walnuts or chopped almonds or other chopped nuts of your choice
  • for nut allergy use sunflower or pumpkin seeds instead
  • 1/2 cup of raisins or chopped dates or other dry fruit of your choice
  • 1/3 cup heaped 100ml of chia seeds
  • 3  cups  750 ml of oat milk or almond milk or rice milk or a plant-based milk of your choice
  • 2 tablespoons of maple syrup or coconut sugar or rice syrup optional
  • 2 to 3 medium apples grated
  • 1/2 cup of blueberries fresh or frozen optional

Instructions

  • In a bowl combine all the dry ingredients and mix with a spoon.
  • Add the liquid ingredients and mix well to combine.
  • Add the grated apples and mix well. Add the blueberries at the end
  • Let the mixture stand for at least 20/30 minutes. Meanwhile heat up the oven to 170°c.
  • Pour the oat mixture into a square or rectangular baking dish lined with baking paper. Spread the mixture evenly and sprinkle with sunflower seeds (optional) or drizzle with rice syrup (optional).
  • Bake at 170°c for 45 minutes
  • Let the baked oats cool down overnight or for a few hours, then slice it into portions, and store in a airtight container in the fridge.

Notes

Serve warm or at room temperature topped with your favourite fruit compote or drizzled with nut butter, or simply take away, as it is.
